Steak Tartar
- 120g good quality beef tenderloin, small dice
- 20g shallot, finely diced
- 20g capers, roughly chopped
- 20g gherkins pickles, small dice
- ½ egg yolk
- ½ tsp Dijon mustard
- 1 tsp Worcestershire sauce
- ½ tsp ketchup
- 1 sprig parsley, finely chopped
Mix the above ingredients and season with salt and pepper.
Arrange on a plate with good-quality crusty bread or crustini and enjoy.
