Rye So Messy Wings
Ingredients
Spicy sauce:
- 1/2 white onion sliced
- 1/2 bunch green onion sliced
- 2 cups gochujang paste (Korean hot pepper paste)
- 1/4 cup Wiser's / Canadian Club rye ( any rye will work)
- 1/2 cup sugar
- 2 cups rice vinegar
- 2 tablespoons black paste
Mango sauce:
- 1 mango small cut
- 1tablespoon 7 spice
- 15 ml rice vinegar
Chicken:
- 1lb chicken wings
Method
Spicy Sauce:

Saute onions until translucent, then deglaze the pan with rye until 20% evaporated.

Add gochujang, rice vinager, sugar and sesame paste in pan. stir slowly until a light simmer.
- Remove pan from heat and blend with a blender or hand blender, then set aside.
Mango Sauce:
- Blend all ingredients together with a hand blender/blender, then set aside.
Chicken

Place chicken wing in a pan with 1 tablespoon cooking oil on med heat.

Cook both size until golden brown about 3-5 min. remove from pan and place in a bowl.

Mix spicy sauce with chicken until coated evenly.
- Place the chicken in desired plate ware and spoon mango sauce on top.
