Goat Cheese Mousse
Ingredients
- 1/2 Cup Whipping Cream
- 2 Tbsp. Milk
- 4 oz Soft Goat’s Cheese
- 1 Tbsp. Thyme
- 1 Tbsp. Parsley
- 1 Tbsp. Chives
Method

Whip the cream

Add the milk to the goat’s cheese & mix

Add in the herbs to the goat’s cheese mixture

Gently fold into cream
- Chill & Serve
Roasted Beet Salad
Ingredients
- Local Red & Golden Beets (medium sized)
Method

Roast Beets for 1 hour until tender

Cool in Fridge

Peel Beets and cut into 8ths

Toss Beets in Olive Oil and Salt & Pepper

Prepare Plate (Goat Cheese Mousse & Microgreens)
- Drizzle with Balsamic Glaze
