Goat Cheese Mousse

Ingredients

  • 1/2 Cup Whipping Cream
  • 2 Tbsp. Milk
  • 4 oz Soft Goat’s Cheese
  • 1 Tbsp. Thyme
  • 1 Tbsp. Parsley
  • 1 Tbsp. Chives

Method

  1. Whip the cream
     
  2. Add the milk to the goat’s cheese & mix
     
  3. Add in the herbs to the goat’s cheese mixture
     
  4. Gently fold into cream
     
  5. Chill & Serve

 

Roasted Beet Salad

Ingredients

  • Local Red & Golden Beets (medium sized)

Method

  1. Roast Beets for 1 hour until tender
     
  2. Cool in Fridge
     
  3. Peel Beets and cut into 8ths
     
  4. Toss Beets in Olive Oil and Salt & Pepper
     
  5. Prepare Plate (Goat Cheese Mousse & Microgreens)
     
  6. Drizzle with Balsamic Glaze
