Fat Mao sesame noodles

Ingredients for sesame sauce:

  • 400g sesame paste
  • 400g toasted sesame seeds
  • 1200g water
  • 6 Tablespoon salt
  • 6 cloves garlic
  • juice of 4 lemons
  • zest of 4 lemons
  • 1.5 cups rice vinegar
  • 1/2 cup sugar
  • 1/2 cup light soy sauce

Blend all ingredients together until smooth. If not using immediately, thin the paste with a bit of water, as sesame will thicken with time. If you do this, the seasoning will need to be adjusted.

Garnish:

  • 3 tbsp carrots, julienned
  • 3 tbsp cucumbers, julienned
  • *Compressed daikon
  • *Compressed red radish
  • 3 tbsp lettuce heart, julienned
  • 3 tbsp snow peas, julienned
  • Tofu
  • 3 tbsp Asian pear, julienned
  • Toasted sesame seeds for garnish
  • Green onion for garnish
  • Cilantro for garnish
  • 120g fresh homemade noodles, or dried thin white wheat noodles

Blanch the noodles until al dente. Rinse under cold water. Dress noodles and vegetables with just enough sauce to coat, and carefully place all garnishes on top. Serve with extra sauce on the side.

*Compressed vegetables are made with julienned vegetables placed in pickling syrup, and compressed with a food saver or sous-vide machine with appropriate bags. Pickling Syrup is made up of equal parts of sugar, water, and white vinegar. The vegetables should sit in the syrup for at least a day.
