Best Exotic Saffron Rice Pudding

  • 2 Tbsp unsalted butter
  • 10 green cardamom pods
  • 5 star anise
  • 2 cinnamon sticks -2 inches long
  • 1 cup short grain white rice
  • 2 L whole milk
  • 250L whipping cream
  • 3 Tbsp sugar
  • 1/8 tsp fennel powder
  • 1/8 tsp cardamom powder
  • 1 tsp saffron
  • 1 cup strawberries-cut into quarters
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 medium mango- peeled, pitted and cubed

 

In a large saucepan, add butter and heat on medium heat. Add cardamom pods, star anise, cinnamon sticks and heat the spices for 15 to 20 seconds. Add rice and milk and stir regularly until the rice is almost cooked. Add whipping cream, sugar, fennel powder, cardamom powder and saffron and cook until the mixture thickens and the rice is fully cooked. Turn the heat off and let the rice pudding cool.

Serve with berries and mango.
