Chef Dale MacKay’s Grilled Cheese Sandwich

· multigrain bread
· Armstrong Marble Cheddar
· butter
· olive-tomato spread
· roasted garlic
· black olives
· semi-dry tomatoes
· olive oil
· fresh flat leaf parsley
· lemon zest

Assembly and Cooking:
1. Butter both sides of two slices of bread
2. Spread the olive-tomato spread on the inside of one slice of bread
3. Grate the cheese on the bread with the olive-tomato spread
4. Close the sandwich with the second piece of buttered bread
5. Cook the sandwich in a frying pan until both sides are crisp and golden brown
