Frissant: fritter mixed with croissant

Swiss Bakery is in the kitchen sharing their Canadian version of the Cronut, the Frissant -- a fritter mixed with a croissant.

 

  1. Scaling and mixing the dough
  2. Cutting the dough, then rolling it out
  3. Flatten out butter and make sure its pliable
  4. Fold Dough over butter and “lock” butter in.
  5. Sheet and fold numerous times.
  6. Rest the Dough
  7. Freeze dough
  8. Defrost dough and cut
  9. Place into proofer for it to rise
  10. Remove and fry
  11. Wait for it to cool, coat with cinnamon sugar, inject cream, add topping
